Balsamic Chicken Breasts with Mushrooms and Onions

3 boneless skinless chicken breasts
2 TBSP olive oil
1/2 lb white mushrooms, halved
1 red onion, sliced
3 cloves garlic, minced
3/4 cup chicken broth
1/4 cup balsamic vinegar
salt and pepper


1. Pat the chicken breasts dry with paper towels and liberally season with salt and pepper.

2. Heat the oil in a dutch oven over medium-high heat. Cook the chicken for 3 minutes then flip and cook 3 more minutes. Remove chicken from pan and set aside.

3. Add the mushrooms and onions to the pan and cook, stirring occasionally, for about 5 minutes or until the onions begin to soften. Stir in garlic and cook 30 seconds.

4. Add the chicken broth and balsamic and stir scraping the bottom to release any stuck on bits. Return chicken breasts to the pan and reduce heat to low. Cover and simmer 15 minutes or until chicken is cooked through.
