INGREDIENTS
1/2 TBSP unsalted butter, softened
4 large eggs
1 tsp minced shallots
1 garlic clove, minced
2 cups heavy cream
1/8 tsp dried thyme
1/2 tsp kosher salt
1/4 tsp white Pepper
2 bunches Leeks, cleaned, quartered, and chopped into 1-inch pieces
1/2 cup freshly grated Parmesan
CONVERSION CALCULATOR
DIRECTIONS
Preheat the oven to 400°F.
Butter the inside of a 4-cup quiche pan or pie plate and set aside.
In a large bowl whisk together the eggs, shallots, garlic, heavy cream, thyme, salt and pepper.
Cover the bottom of the buttered dish with half the leeks then sprinkle with half the Parmesan cheese.
Top with the remaining leeks and then the remaining Parmesan cheese.
Pour the egg mixture into the pan over the leeks and cheese.
Bake in the preheated oven for about 20 minutes or until set.
