INGREDIENTS
8 ounces uncooked pasta shells
8 ounces medium cheddar cheese, shredded
1 cup cottage cheese
2 large eggs
1 tsp kosher salt
pinch nutmeg
pinch cayenne pepper
pinch white pepper
pinch dry mustard
2 cups heavy cream
1 TBSP unsalted butter
CONVERSION CALCULATOR
DIRECTIONS
Cook shells in boiling water 2 minutes longer than package directions. Drain and cool.
Preheat oven to 350° F.
Puree the cottage cheese in a food processor or blender.
Blend in the eggs and spices.
Add the heavy cream and pulse about 5 times.
Butter an 8 cup baking dish.
In a large bowl mix the cooked pasta, the liquid mixture and half the cheese and pour into the buttered baking dish.
Cover with the remaining half of the cheese and bake for 25 minutes or until set.
