Ratatouille Tian
The familiar flavors of the French vegetable stew beautifully arranged as a casserole.

Ingredients
- 4 TBSP tomato paste
- 1/4 cup water
- 1/2 tsp granulated garlic
- dash salt
- 2 yellow tomatoes, sliced
- 2 red tomatoes, sliced
- 1 purple tomato, sliced
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 orange pepper, cut into like size pieces
- 1 purple pepper, cut into like sized pieces
- Olive oil spray
- 1 TBSP Herbs de Provence
- salt & pepper
Directions
- Mix the tomato paste, water, garlic, and salt and spread over the bottom of a tart pan or large pie plate.
- Lay all the vegetables out on cutting boards or baking sheets. Spray with olive oil spray.
- Sprinkle with Herbs de Provence, salt & pepper. Preheat the oven to 400 degrees F.
- Place the vegetables into the tart pan by artfully shingling them alternating colors, begin on the outside and coil around to the middle.
- Cover with foil and bake for 1 hour.
- Enjoy.
Notes
