Au Gratin Leeks

Ingredients
- 1/2 TBSP Butter, soft
- 4 Eggs
- 1 tsp Shallots, minced
- 1/2 tsp Garlic, minced
- 2 cups Heavy Cream
- 1/8 tsp Thyme
- 1/2 tsp Kosher Salt
- 1/4 tsp White Pepper
- 2 bunches Leeks, cleaned, quartered diced 1 inch (about 4 cups)
- 1/2 cup Parmesan , freshly shredded
Directions
- Preheat oven to 400 degrees F.
- Butter a 4 cup quiche pan or pie plate and set aside.
- In a large bowl whisk the eggs with the shallots, garlic, cream, thyme, salt and pepper
- Cover the bottom of the buttered dish with half the leeks and sprinkle with half the Parmesan cheese.
- Top with the remaining leeks and then the remaining Parmesan cheese.
- Pour the egg mixture of the leeks and cheese. Bake in the oven for 20 minutes.
- Cut in to slices or spoon out.
