INGREDIENTS

  • 2 TBSP olive oil
  • 1 pound uncooked orzo pasta
  • 5 medium garlic cloves, minced
  • salt & freshly ground black pepper
  • 4 cups water
  • 2 TBSP fresh lemon juice



DIRECTIONS

  1. Add the oil to a large pot over medium-high heat.
  2. Add the orzo, garlic, 1 tsp salt, and 1/2 tsp freshly ground black pepper to the pot and cook while stirring for about 1 minute.
  3. Stir in the water then bring to a boil.
  4. Reduce the heat to medium-low and simmer uncovered, stirring often, until the liquid is absorbed and the orzo is tender, around 10 minutes.
  5. Take the pot off the heat then stir in the lemon juice.
  6. Season with additional salt & pepper if needed.
