INGREDIENTS

  • 1 tsp peanut oil
  • 8 ounces pitted Medjool dates
  • 1/4 cup water
  • 8 TBSP unsalted butter, melted
  • 1/2 cup unsweetened 100% cocoa powder
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1/4 tsp salt
  • 1/4 cup all-purpose flour



DIRECTIONS

  1. Preheat oven to 350°F.
  2. Coat the inside bottom and sides of an 8x8-inch baking dish with the peanut oil.
  3. Add the dates and water to a food processor or blender and blend into a paste.
  4. Transfer the date paste to a large bowl then stir in the butter and cocoa powder until well combined and you no longer see any dry cocoa powder.
  5. Stir in the eggs and vanilla until well combined.
  6. Now stir in the salt and flour until well combined and you no longer see any dry white flour.
  7. Spread the batter out evenly into the greased baking dish
  8. Bake in the preheated oven for about 25 minutes or until the center is just set.
  9. Allow to cool for about 20 minutes before slicing and serving.
