INGREDIENTS
12 ounces angel hair pasta
1 TBSP olive oil
1 pound boneless skinless chicken breasts, cut into bite-size pieces
salt & freshly ground black pepper
2 TBSP plus 1 TBSP unsalted butter
4 medium garlic cloves, minced
1/4 tsp crushed red pepper flakes
2 TBSP fresh lemon juice
2 TBSP freshly chopped parsley

DIRECTIONS
Cook the pasta according to package directions then drain and set aside.
Add the chicken, olive oil, 1 tsp salt, and 1/4 tsp black pepper to a bowl then toss to coat.
Melt 2 TBSP of the butter with the oil in a large saute pan over medium heat.
Add the chicken to the pan and cook, stirring often, until no longer pink, about 8 minutes.
Add the garlic and crushed red pepper to the pan then cook while stirring, for about 1 more minute.
Take the pan off the heat then gently stir in the cooked pasta, lemon juice, parsley, and remaining 1 TBSP of butter until melted.
Taste and season with additional salt & pepper if necessary.
