INGREDIENTS

  • 3 cups water
  • 1 1/2 cups whole milk
  • 1 cup yellow cornmeal
  • salt & freshly ground black pepper
  • 2 TBSP unsalted butter
  • 1 ounce freshly grated Asiago cheese



DIRECTIONS

  1. Stir together the water, milk, cornmeal, 1/2 tsp salt, and 1/4 tsp black pepper in a medium-size saucepan over medium heat.
  2. Stir often until it just begins to boil then reduce the heat to low and place a lid on the pan.
  3. Simmer, covered, over low heat, stirring occasionally, until cornmeal is creamy and tender, about 20 minutes.
  4. Take the pan off the heat then stir in the butter and Asiago cheese until well incorporated.
  5. Season with additional salt & pepper to taste.
