INGREDIENTS
2 pounds russet potatoes
6 ounces heavy cream
2 TBSP unsalted butter
salt & freshly ground black pepper

DIRECTIONS
Peel the potatoes and cut them into roughly 1-inch pieces then place them into a large pot.
Completely cover the potatoes with cold water (at least 2-inches above the potatoes) and stir in 1 tsp salt.
Bring to a boil over medium-high heat and cook the potatoes until tender, 10 to 15 minutes.
Drain the potatoes and set aside.
Heat the heavy cream and butter in the now empty pot over medium-low heat until warmed through and the butter has melted.
Take the pot off the heat and add the potatoes back into the pot then mash with a potato masher until well mashed.
Stir and taste then add salt & pepper as needed.
