Ground Beef Gyros
Seasoned ground beef served in warm pitas with a feta, tomato, onion, olive, and lettuce mix and topped with homemade tzatziki sauce.

Ingredients
- TZATZIKI SAUCE:
- 1 medium English cucumber, peeled and small diced
- 12 ounces plain Greek yogurt
- 2 garlic cloves, minced
- 1 TBSP olive oil
- 1 tsp fresh lemon juice
- 1/4 tsp dried dill
- salt & pepper
- GYROS:
- 1 pound ground beef
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp dried dried rosemary
- 1/2 tsp dried oregano
- 3/4 tsp salt
- 1/4 tsp freshly ground black pepper
- 4 ounces feta cheese, crumbled
- 1 cup grape tomatoes, sliced
- 1/2 cup thinly sliced red onion
- 1/2 cup sliced black olives
- 2 cups shredded lettuce
- 1 TBSP olive oil
- 1 TBSP red wine vinegar
- 4 warm pita breads

Directions
- TZATZIKI SAUCE:
- Squeeze the diced cucumber in a paper towel to extract as much moisture as possible.
- Mix the cucumber with the yogurt, garlic, olive oil, lemon juice, dill, 1/2 tsp salt and 1/8 tsp pepper in a bowl until well combined.
- Season with additional salt & pepper if necessary. Cover and refrigerate until ready to use.
- GYROS:
- Preheat the oven to 425°F.
- In a large mixing bowl use your hands to combine the ground beef, onion powder, garlic powder, rosemary, oregano, salt, and pepper until thoroughly combined.
- Place the beef mixture on a baking sheet and shape into a rectangle roughly 3/4-inch thick. Bake in the preheated oven until cooked through, about 25 minutes.
- Take the beef out of the oven and place on a cutting board and set aside to cool for about 10 minutes.
- In a large bowl mix together the feta, tomatoes, red onion, black olives, lettuce, olive oil, and vinegar and set aside.
- When the beef has cooled slice it into strips.
- Fill your pita breads with the sliced beef and lettuce mix then top with tzatziki sauce.
