INGREDIENTS

  • TZATZIKI SAUCE:
  • 1 medium English cucumber, peeled and small diced
  • 12 ounces plain Greek yogurt
  • 2 garlic cloves, minced
  • 1 TBSP olive oil
  • 1 tsp fresh lemon juice
  • 1/4 tsp dried dill
  • salt & pepper
  • GYROS:
  • 1 pound ground beef
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp dried dried rosemary
  • 1/2 tsp dried oregano
  • 3/4 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 4 ounces feta cheese, crumbled
  • 1 cup grape tomatoes, sliced
  • 1/2 cup thinly sliced red onion
  • 1/2 cup sliced black olives
  • 2 cups shredded lettuce
  • 1 TBSP olive oil
  • 1 TBSP red wine vinegar
  • 4 warm pita breads



DIRECTIONS

  1. TZATZIKI SAUCE:
  2. Squeeze the diced cucumber in a paper towel to extract as much moisture as possible.
  3. Mix the cucumber with the yogurt, garlic, olive oil, lemon juice, dill, 1/2 tsp salt and 1/8 tsp pepper in a bowl until well combined.
  4. Season with additional salt & pepper if necessary. Cover and refrigerate until ready to use.
  5. GYROS:
  6. Preheat the oven to 425°F.
  7. In a large mixing bowl use your hands to combine the ground beef, onion powder, garlic powder, rosemary, oregano, salt, and pepper until thoroughly combined.
  8. Place the beef mixture on a baking sheet and shape into a rectangle roughly 3/4-inch thick. Bake in the preheated oven until cooked through, about 25 minutes.
  9. Take the beef out of the oven and place on a cutting board and set aside to cool for about 10 minutes.
  10. In a large bowl mix together the feta, tomatoes, red onion, black olives, lettuce, olive oil, and vinegar and set aside.
  11. When the beef has cooled slice it into strips.
  12. Fill your pita breads with the sliced beef and lettuce mix then top with tzatziki sauce.
