Squeeze the diced cucumber in a paper towel to extract as much moisture as possible.
Mix the cucumber with the yogurt, garlic, olive oil, lemon juice, dill, 1/2 tsp salt and 1/8 tsp pepper in a bowl until well combined.
Season with additional salt & pepper if necessary. Cover and refrigerate until ready to use.
GYROS:
Preheat the oven to 425°F.
In a large mixing bowl use your hands to combine the ground beef, onion powder, garlic powder, rosemary, oregano, salt, and pepper until thoroughly combined.
Place the beef mixture on a baking sheet and shape into a rectangle roughly 3/4-inch thick. Bake in the preheated oven until cooked through, about 25 minutes.
Take the beef out of the oven and place on a cutting board and set aside to cool for about 10 minutes.
In a large bowl mix together the feta, tomatoes, red onion, black olives, lettuce, olive oil, and vinegar and set aside.
When the beef has cooled slice it into strips.
Fill your pita breads with the sliced beef and lettuce mix then top with tzatziki sauce.
