Directions

  1. In a large mixing bowl stir together the yeast and warm water. Stir in the flours, 1/2 tsp salt, and 2 TBSP olive oil until well combined and a dough is formed.

  2. Knead the dough by hand for about 5 minutes on a lightly floured surface.

  3. Form the dough into a ball and place in a large clean bowl. Drizzle 1 tsp of olive oil over the dough and flip around a few times to coat in the oil. Cover the bowl and put in a warm place to rise for about 1 hour.

  4. Preheat the oven to 450°F. Lightly oil a large 16-inch pizza pan or a rimmed 18x13-inch baking sheet.

  5. Stretch or roll out the dough to fit in your pan and set aside.

  6. Mix together the mayonnaise, garlic, 1/8 tsp salt, and 1/8 tsp pepper in a bowl then spread evenly on top of the pizza dough.

  7. Melt 1/2 TBSP of butter in a large pan over medium-high heat. When the butter has melted add the sliced steak and season lightly with salt & pepper. Cook while stirring until beef is just browned, 3 to 5 minutes depending on the thickness of the slices. Transfer the steak to a plate and set aside.

  8. Melt the remaining 1/2 TBSP of butter in the now empty pan over medium-high heat. Add the mushrooms and cook, stirring ocassionally, until mushrooms are browned, about 5 minutes.

  9. Take the pan off the heat and stir the steak in with the mushrooms. Lay the provolone slices on the pizza dough then spread on the steak and mushroom mixture and sprinkle on the shredded cheddar cheese on top.

  10. Bake in the preheated oven for 18 to 20 minutes or until crust is browned and cheese is bubbly.
