Also known as Brazilian this pizza consists of a homemade whole wheat dough topped with mozzarella, tomato, onion, olives, hard-boiled egg, and a homemade Portuguese-style sausage.

INGREDIENTS

  • THE DOUGH:
  • 1 packet active dry yeast (2 1/4 tsp)
  • 1 cup warm water
  • 3 cups whole wheat flour
  • 1/2 tsp salt
  • 2 TBSP plus 1 TBSP olive oil
  • SAUSAGE:
  • 8 ounces ground pork
  • 2 medium garlic cloves, minced
  • 1/2 serrano pepper, minced
  • 1 TBSP red wine vinegar
  • 1 tsp paprika
  • 1/4 tsp salt
  • 1/8 tsp freshly ground black pepper
  • 1/8 tsp ground cinnamon
  • TOPPINGS AND ASSEMBLY:
  • 8 ounces mozzarella cheese, shredded
  • 2 large eggs
  • 1 medium ripe tomato, small chopped
  • 1/2 cup sliced black olives
  • 1/2 red onion, thinly sliced
  • 1 tsp dried oregano
  • 1 TBSP olive oil plus a little extra



DIRECTIONS

  1. DOUGH:
  2. In a large mixing bowl stir together the yeast and warm water. Stir in the flour, salt, and 2 TBSP olive oil until well combined and a dough is formed.
  3. Knead the dough by hand for about 5 minutes on a lightly floured surface.
  4. Form the dough into a ball and place in a large clean bowl. Drizzle 1 TBSP of olive oil over the dough and flip around a few times to coat in the oil. Cover the bowl and put in a warm place to rise for about 1 hour.
  5. SAUSAGE:
  6. Use your hands to mix all the ingredients in a large bowl until well combined.
  7. Roll the sausage into balls roughly 2-inches in diameter then flatten them with the palm of your hand into 1/4-inch thick patties.
  8. Heat a pan over medium heat and cook the patties until browned on both sides and cooked through, about 3 minutes per side then transfer the cooked sausage to a paper towel lined plate and set aside.
  9. Place the sausage patties on a cutting board and allow to cool for a few minutes then roughly chop with a knife.
  10. TOPPINGS AND ASSEMBLY:
  11. Add the eggs to a small saucepan and cover with warm water. Bring to a boil over medium-high heat. When water begins boiling place a lid on the pan and turn off the heat. Let eggs sit while covered for 10 minutes. After 10 minutes drain the eggs and rinse under cold water. Carefully peel and slice the eggs and set aside.
  12. Preheat the oven to 475°F.
  13. Lightly oil a large pizza pan or 18x13-inch baking sheet then stretch the dough to fit on your pan.
  14. Sprinkle the mozzarella evenly on top of the dough then sprinkle on the tomatoes, sausage, olives, onion, and oregano then bake in the preheated oven about 17 minutes.
  15. Remove the pizza from the oven and lay on the egg slices then drizzle the pizza with about 1 TBSP of olive oil.
