INGREDIENTS

  • BBQ SAUCE:
  • 2 TBSP unsalted butter, melted
  • 1/2 cup raw honey
  • 1/2 cup Dijon mustard
  • 4 TBSP apple cider vinegar
  • 2 TBSP tomato paste
  • 2 tsp smoked paprika
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • PORK RIBS:
  • 3 pounds bone-in country style pork ribs
  • 2 TBSP olive oil plus extra
  • 1 medium yellow onion, thinly sliced
  • 12 ounces lager beer of your choice
  • salt and pepper



DIRECTIONS

  1. BBQ SAUCE:
  2. Add the BBQ SAUCE ingredients to a medium-size saucepan over medium heat and bring to a slight boil.
  3. reduce heat to low and simmer, stirring occasionally, until flavors have melded, about 10 minutes.
  4. Take the pan off the heat then season with salt & pepper to taste and set aside.
  5. PORK RIBS:
  6. 1.Pat the pork ribs dry with paper towels then generously season the ribs with salt and pepper on both sides.
  7. Preheat the oven to 375°F.
  8. Heat the 2 TBSP of oil in a dutch oven over medium-high heat.
  9. Sear HALF the ribs in the oil until well browned all over, about 7 minutes total.
  10. Transfer the seared ribs to a plate and set aside then sear the rest of the ribs the same way, adding more oil if needed.
  11. Set all the seared ribs on the plate and set aside then add the onion to the dutch oven cook, stirring often, for about 3 minutes.
  12. Pour the beer into the dutch oven then use a wooden spoon to scrape the bottom, releasing any stuck on bits.
  13. Return the ribs back into the dutch oven then pour in the BBQ sauce and bring to a boil.
  14. Place the lid on the dutch oven and place in the preheated oven.
  15. braise the ribs in the oven for 1 hour and 30 minutes.
  16. Take the lid off the dutch oven and cook an additional 30 minutes or until ribs are tender and sauce has thickened.
