Garlic and Bacon Orzo
Servings: 2
Total Time: 15 minutes
Ingredients
3 slices of homemade bacon cut into small strips
1 TBSP unsalted butter
8 oz orzo pasta
3 cloves of garlic minced
2 cups chicken broth
salt and pepper
Directions
1. Cook the bacon over medium-high heat in a medium size saucepan until crispy, about 5 to 6 minutes. Remove bacon and set aside, leaving the bacon fat in the pan.
2. Add the butter to the bacon fat along with the garlic and orzo. Stir for 30 seconds or until fragrant.
3. Slowly pour in the chicken broth and stir scraping the bottom of the pan to release any stuck on bits. Bring to a boil then reduce heat to medium-low.
4. Simmer uncovered, stirring occasionally, about 7 to 8 minutes or until the liquid is absorbed.
5. Stir in the cooked bacon pieces. Add salt and pepper if necessary and serve.
