In a large bowl stir together 2 cups of the flour, 2 TBSP of the oil, the salt, and the water until well combined.
Knead the dough with your hands for a few minutes until you have a pliable dough that you can roll into a smooth ball.
Cover the dough ball with a damp towel and set aside to rest for 30 minutes.
Lightly flour a flat work surface then separate the dough into 8 equal size balls.
Flatten the dough balls and roll them out into circles roughly 7-inches in diameter.
Brush the top side of the dough circles with a little oil then sprinkle a little flour on top of the oil. Now fold the circle in half to make a half-circle shape.
Brush the top side of the dough half-circles with a little oil then sprinkle on a little more flour. Now fold the half-circles in half to make a triangle shape.
Sprinkle both sides of the triangle shaped dough pieces with flour then roll them out doing your best to mantain the triangle shape until theyre roughly 7-inch triangle shapes.
Heat a griddle or large non-stick pan over medium heat until very hot.
Brush any excess flour off the dough then lay on the hot griddle.
Cook the paratha for 2 to 4 minutes per side or until lightly browned with a few dark brown spots.
Transfer the cooked parathas to a plate while stacking them on top of one another.
