INGREDIENTS
1/2 cup dried chickpeas, rinsed
8 ounces farfalle pasta
1 medium garlic clove, minced
1 tsp fresh lemon zest
2 TBSP fresh lemon juice
salt & freshly ground black pepper
1/4 cup freshly grated Parmesan cheese

DIRECTIONS
Place the chickpeas in a saucepan and cover with about 3-inches of water then bring to a boil over medium-high heat.
Place a lid on the pan and reduce the heat to medium-low. Simmer the chickpeas until tender, about 1 hour and 10 minutes.
Drain and rinse the chickpeas then set aside.
Cook the farfalle pasta according to package directions then drain.
Combine the chickpeas, farfalle pasta, garlic, lemon zest, lemon juice, 1/2 tsp salt, and 1/4 tsp black pepper in a large bowl until well combined.
Sprinkle with the freshly grated Parmesan then taste and season with additional salt & pepper, if needed.
