INGREDIENTS
THE DOUGH:
1 1/4 cups warm water
1 package (2 1/4 tsp) active dry yeast
2 cups all-purpose flour
1 cup whole wheat flour
1 TBSP olive oil
1/2 tsp tsp salt
THE TOPPINGS:
olive oil (about 1/4 cup)
1 medium garlic clove, minced
1 tsp dried oregano
1/4 tsp crushed red pepper
salt & freshly grated black pepper
8 ounces boneless skinless chicken breast, sliced thin
5 ounces havarti cheese, shredded
4 ounces mozzarella cheese, shredded
2 ounces fresh baby spinach leaves, roughly chopped

DIRECTIONS
THE DOUGH:
Stir together the yeast and water in a large mixing bowl then set aside for 5 minutes to allow the yeast to hydrate.
Stir in the flours, olive oil, and salt then knead the dough by hand in the bowl for about 10 minutes.
Loosely cover the bowl and set aside in a warm place for about 1 hour to allow the dough to rise.
THE TOPPINGS:
In a small bowl mix together 3 TBSP of olive oil, garlic, oregano, crushed red pepper, and 1/8 tsp salt until well combined then set aside.
In another bowl mix together the sliced chicken, 1 TBSP olive oil, 1/4 tsp salt, and 1/8 tsp black pepper until chicken is evenly coated.
Heat a skillet over medium heat then cook the chicken, stirring often, until no longer pink, about 7 minutes.
Preheat the oven to 475°F.
Stretch the dough out onto a large pizza pan or baking sheet pan then brush the garlic oil on top then set aside while the oven preheats.
Pre-bake the pizza dough in the oven for 10 minutes.
Take the dough out of the oven and sprinkle on the cheeses then top with the chopped spinach and chicken.
Return the pizza to the oven and bake until the crust is crisp and the cheese just starts to brown, about 10 more minutes.
