INGREDIENTS

  • 1 pound whole grain linguine pasta
  • 8 ounces fresh baby spinach, roughly chopped
  • 1/4 cup pine nuts
  • 3 medium garlic cloves, peeled
  • 1/2 ounce freshly grated Parmesan cheese
  • 1/3 cup olive oil
  • salt & freshly ground black pepper



DIRECTIONS

  1. Cook the linguine according to package directions then drain the pasta reserving 1/2 cup of the pasta water and set aside.
  2. Add the chopped spinach, pine nuts, garlic, and Parmesan to a food processor and pulse into a paste.
  3. Transfer the spinach paste to a large bowl then stir in the olive oil, 1/2 tsp salt, and 1/4 tsp black pepper until well combined.
  4. Add the linguine to the bowl and toss with the pesto sauce.
  5. Stir in a little of the reserved pasta water at a time until you reach a desired consistency.
  6. Season with additional salt & pepper to taste.
