Use up that leftover holiday turkey to make some tasty turkey soft tacos, flour tortillas filled with seasoned turkey, onion, Monterey Jack cheese, lettuce, jalapenos, and corn.

INGREDIENTS
2 TBSP olive oil
1 pound chopped cooked turkey
1 yellow onion, diced
1 TBSP paprika
1 tsp ground cumin
1 tsp dried oregano
1/2 tsp granulated garlic
1/8 tsp cayenne pepper
1 cup water
salt & freshly ground black pepper
12 8-inch flour tortillas
6 ounces Monterey Jack cheese, shredded
2 cups shredded iceberg lettuce
1 cup cooked corn kernels
1 large jalapeno, thinly sliced
CONVERSION CALCULATOR
DIRECTIONS
Heat the oil in a dutch oven or large saucepan over medium heat.
Add the turkey and onion to the pan and cook, stirring often, until the onion softens, about 7 minutes.
Stir in the paprika, cumin, oregano, garlic, cayenne, water, and 3/4 tsp salt until well combined then bring to a boil.
Reduce the heat to medium-low and simmer, stirring occasionally, until most of the liquid has evaporated, about 10 minutes.
Warm up the tortillas then fill them with the turkey mixture, cheese, lettuce, corn, and jalapeno.
