INGREDIENTS

  • 1 pound rigatoni pasta
  • 1 pound ground pork
  • 3 garlic cloves, minced
  • 1/8 tsp nutmeg
  • salt & freshly ground black pepper
  • 2 TBSP olive oil
  • 1 cup heavy cream
  • 1/4 cup freshly grated Pecorino Romano cheese



DIRECTIONS

  1. Cook the pasta according to package directions then drain, reserving about 1/4 cup of the pasta water.
  2. WHILE THE PASTA COOKS:
  3. In a large bowl mix together the ground pork, garlic, nutmeg, 1 tsp salt, and 1/2 tsp black pepper until well combined.
  4. Heat the oil in a large saute pan over medium heat.
  5. Add the pork mixture to the pan and cook, stirring often while breaking up the pork, until browned, about 8 minutes.
  6. Stir in the heavy cream and cook, stirring often, until thickened, about 5 minutes.
  7. Take the pan off the heat then stir in the cooked pasta, adding the reserved pasta water a little at a time until you reach a desired consistency.
  8. Taste and season with additional salt & pepper, if needed, then serve topped with the freshly grated Pecorino.
