INGREDIENTS
1 pound rigatoni pasta
1 pound ground pork
3 garlic cloves, minced
1/8 tsp nutmeg
salt & freshly ground black pepper
2 TBSP olive oil
1 cup heavy cream
1/4 cup freshly grated Pecorino Romano cheese

DIRECTIONS
Cook the pasta according to package directions then drain, reserving about 1/4 cup of the pasta water.
WHILE THE PASTA COOKS:
In a large bowl mix together the ground pork, garlic, nutmeg, 1 tsp salt, and 1/2 tsp black pepper until well combined.
Heat the oil in a large saute pan over medium heat.
Add the pork mixture to the pan and cook, stirring often while breaking up the pork, until browned, about 8 minutes.
Stir in the heavy cream and cook, stirring often, until thickened, about 5 minutes.
Take the pan off the heat then stir in the cooked pasta, adding the reserved pasta water a little at a time until you reach a desired consistency.
Taste and season with additional salt & pepper, if needed, then serve topped with the freshly grated Pecorino.
