INGREDIENTS
3 TBSP olive oil
2 medium garlic cloves, chopped
1 1/2 pounds cherry tomatoes, halved
1/2 tsp crushed red pepper flakes
salt & freshly ground black pepper
1/4 cup freshly torn basil leaves
1 ounce freshly grated Parmesan
1 ounce freshly grated Pecorino Romano
1 pound spaghetti pasta
CONVERSION CALCULATOR
DIRECTIONS
Heat the olive oil in a large saute pan over medium heat.
Add the garlic to the pan and cook while stirring for a few seconds, just until the garlic is fragrant.
Add the tomatoes, crushed red pepper, and 1/4 tsp salt to the pan and cook, stirring occasionally, for about 5 minutes.
Reduce the heat to low and simmer the tomatoes, stirring occasionally, while you make the pasta.
Cook the spaghetti pasta according to package directions then drain, reserving 1/2 cup of the pasta water.
Stir the cooked spaghetti into the pan with the tomatoes.
Now stir in the basil, Parmesan, and Pecorino while stirring in a little of the reserved pasta water until you get a desired consistency.
Taste and season with salt & pepper as needed.
