INGREDIENTS

  • 3 TBSP olive oil
  • 2 medium garlic cloves, chopped
  • 1 1/2 pounds cherry tomatoes, halved
  • 1/2 tsp crushed red pepper flakes
  • salt & freshly ground black pepper
  • 1/4 cup freshly torn basil leaves
  • 1 ounce freshly grated Parmesan
  • 1 ounce freshly grated Pecorino Romano
  • 1 pound spaghetti pasta



DIRECTIONS

  1. Heat the olive oil in a large saute pan over medium heat.
  2. Add the garlic to the pan and cook while stirring for a few seconds, just until the garlic is fragrant.
  3. Add the tomatoes, crushed red pepper, and 1/4 tsp salt to the pan and cook, stirring occasionally, for about 5 minutes.
  4. Reduce the heat to low and simmer the tomatoes, stirring occasionally, while you make the pasta.
  5. Cook the spaghetti pasta according to package directions then drain, reserving 1/2 cup of the pasta water.
  6. Stir the cooked spaghetti into the pan with the tomatoes.
  7. Now stir in the basil, Parmesan, and Pecorino while stirring in a little of the reserved pasta water until you get a desired consistency.
  8. Taste and season with salt & pepper as needed.
