Recipe by: Rae

1/2 cup pickle juice
1/2 cup milk
2 chicken breast. boneless, skinless
1 egg
1 TBSP Milk
3 TBSP Powdered sugar
1 cup flour
1 cup oil
2 soft sweet white bread buns

1. Pound the chicken breast to 3/4 inch thickness.

2. Combine the pickle juice and 1/2 cup milk in a zipper bag. Add the chicken, zip and shake. Allow to marinate in fridge for 30 minutes to 1 hour.

3. In the mean time make your breading station: mix the egg and the 1 TBSP milk in a zipper bag and mix together. In a separate bag combine the flour, powdered sugar and a dash of black pepper.

4. Once chicken has marinated remove from marinade and pat dry with towels. Heat the oil in a sauce pot or skillet to 350 degrees.

5. Dredge the chicken in the flour mix, then the egg mix, then back into the flour mix. Shake off and then carefully add to the hot oil. Repeat with the second piece of chicken.

6. Fry of one side until well browned and crispy turn and fry on second side. About 3-4 per side. Cook until at least 165 degrees F internal temperature.

7. Toast the buns and serve with mayo and pickles.

Serve with waffle fries and homemade lemonade.
For nuggets you can use the same recipe, only cut the chicken into pieces.
For spicy chicken add 8 dashes Tabasco sauces to the marinade, 3 dashes Tabasco sauce to the egg mix and 1/2 tsp cayenne pepper to the flour mix.
