1/2 cup yellow onion, grated and squeezed dry in a towel
1 clove garlic, minced
1 egg
1 tsp kosher salt
1/4 tsp black pepper
2 TBSP parsley, chopped
1 TBSP mint, chopped
1 tsp basil, chopped
1 tsp oregano, chopped
zest of 1 lemon (1 TBSP)
Accompaniments:
4 pita bread
2 cups Greek salad
4 oz feta cheese
1 cup tzatziki sauce
DIRECTIONS
In a large bowl combine: ground chicken, yellow onion, garlic, egg, salt, pepper, parsley, mint, basil, oregano, and lemon zest. mix until just combined. Cover and refrigerate 15 minutes.
Preheat the oven to 425 F. Line a baking sheet with parchment paper.
Divide the mix into 16 balls and form small, like size, football shapes.
Place on the prepared baking sheet. Bake 8 minutes, turn each one over and bake 3 minutes or until it registers 165 degrees F.
Serve with the pita, Greek Salad, feta cheese, and tzatziki sauce. Allow each person to serve themselves. Put everything in a pita, eat it all separately, or anything in between.
