Dried pinto beans simmered with onion and spices then mashed until creamy. Basically refried beans without the refried.

INGREDIENTS
1 pound dried pinto beans, rinsed
8 cups water
1 small yellow onion, diced
2 TBSP ground cumin
1 TBSP garlic powder
1 TBSP paprika
1/4 tsp cayenne pepper
salt & black pepper

DIRECTIONS
In a large pot, over medium-high heat, stir together the beans, water, onion, cumin, garlic, cayenne, 1/4 tsp salt, and 1/4 tsp black pepper.
Bring to a boil.
Place a lid on the pot then reduce the heat to medium-low.
Simmer the beans while covered, stirring occasionally, until the beans are very tender, about 1 hour and 45 minutes.
Turn off the heat then strain the beans in a colander over a large container, making sure to reserve any liquid from the pot.
Put the beans back into the pot along with about 1 cup of the reserved liquid.
Use a potato masher to mash the beans thoroughly, adding more of the reserved liquid until you reach a desired consistency.
Taste the beans and season with additional salt & pepper.
