Mexican Spiced Pork Tenderloin

Ingredients
- 2 TBSP olive oil
- 1 tsp salt
- 1 tsp paprika
- 1 tsp ground cumin
- 1 tsp granulated garlic
- 1 tsp onion powder
- 1/2 tsp dried oregano
- 1/4 tsp black pepper
- 1/8 tsp cayenne pepper
- 1 1/4 pounds pork tenderloin
Directions
- Preheat the oven to 425°F.
- In a small bowl mix together the oil and spices until well combined.
- Rub the oil/spice mixture all over the pork tenderloin then place the pork on a rimmed baking sheet.
- Place the pork in the oven and cook until pork has an internal temperature of about 145°F, about 25 minutes.
- Take the pork out of the oven and set aside to rest for 10 minutes before slicing and serving.
