INGREDIENTS
1 TBSP olive oil
8 ounces pork shoulder, diced
1 yellow onion, thinly sliced
1 large head of green cabbage, cored and shredded
4 medium garlic cloves, minced
12 ounces Yukon gold potatoes, cut in 1/2 inch pieces
6 cups water
salt and freshly ground pepper

DIRECTIONS
Heat the oil in a dutch oven or large pot over medium-high heat then add the diced pork and cook, stirring often, for about 2 minutes.
Stir in the onion, cabbage, and garlic and cook, while stirring, for about 2 minutes.
Add the potatoes, water, 2 tsp salt, and 1/4 tsp black pepper and bring to a boil.
Reduce the heat to medium-low and cook, stirring occasionally, until potatoes are tender, 15 to 20 minutes.
Season soup with salt & pepper to taste.
