INGREDIENTS

  • 1 TBSP olive oil
  • 8 ounces pork shoulder, diced
  • 1 yellow onion, thinly sliced
  • 1 large head of green cabbage, cored and shredded
  • 4 medium garlic cloves, minced
  • 12 ounces Yukon gold potatoes, cut in 1/2 inch pieces
  • 6 cups water
  • salt and freshly ground pepper



DIRECTIONS

  1. Heat the oil in a dutch oven or large pot over medium-high heat then add the diced pork and cook, stirring often, for about 2 minutes.
  2. Stir in the onion, cabbage, and garlic and cook, while stirring, for about 2 minutes.
  3. Add the potatoes, water, 2 tsp salt, and 1/4 tsp black pepper and bring to a boil.
  4. Reduce the heat to medium-low and cook, stirring occasionally, until potatoes are tender, 15 to 20 minutes.
  5. Season soup with salt & pepper to taste.
