INGREDIENTS
4 TBSP unsalted butter
1 yellow onion, diced
1 red bell pepper, diced
1/4 cup all purpose flour
1/2 tsp cayenne pepper
salt & freshly ground black pepper
12 ounces beer of your choice
3 cups whole milk
6 ounces sharp cheddar cheese, shredded
4 ounces pepper jack cheese, shredded
optional toppings:
homemade bacon
crumbles, sliced green onion, croutons, etc
CONVERSION CALCULATOR
DIRECTIONS
Melt the butter in a dutch oven or large pot over medium-high heat.
Add the onion and bell pepper to the pot then cook, stirring occasionally, until vegetables have softened, about 5 minutes.
Stir the flour, cayenne, 1 tsp salt, and 1/4 tsp black pepper into the pot until well combined.
Slowly stir in the beer until well combined.
Slowly stir in the milk and cook, stirring often, until it just begins to boil.
Reduce the heat to medium-low then stir in the cheeses, a little a time, until all the cheese is melted and incorporated into the soup.
Taste the soup and season with additional salt & pepper, if needed.
