Add the spinach to a large bowl then stir in the tomatoes, oregano, basil, garlic, salt, and pepper. Set aside.
Lightly oil the inside of a 6-quart slow cooker. Spread a small amount of the tomato sauce on the bottom of the crock-pot, just enough to lightly cover.
Take 3 uncooked noodles and lay them in to cover the bottom of a 5-quart slow cooker (youll have to break them up to fit). Spread 1/3 of the sauce on top of the noodles then sprinkle 1/3 of the mozzarella on top of the sauce. Spread on half the cottage cheese then 3 more noodles then half the remaining sauce then sprinkle on half the remaining mozzarella. Spread on the remaining cottage cheese then the remaining noodles then the remaining sauce and then the sprinkle on the remaining mozzarella. Pour the water in the slow cooker along the edges.
Cover the slow cooker and cook on low for 4 hours and 30 minutes or until noodles are tender.
