Smoky Chili-Lime Chicken with Sweet Potatoes

Ingredients
- 1 TBSP cooking oil
- 2 lb sweet potatoes, sliced 1/2 inch thick
- 4 bone in, skin on chicken thighs
- 1 TBSP lime juice
- 1 tsp lime zest
- 1 tsp olive oil
- 1 tsp kosher salt
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp granulated garlic
- 1/2 tsp cumin
- 1/4 tsp dried cilantro
- 1/4 tsp granulated onion
- 1/4 tsp black pepper
- 1/8 tsp cayenne pepper
- 6 lime circle slices
- 1 TBSP chopped fresh cilantro
Directions
- Preheat the oven to 425 degrees F. Brush a 9x9 baking dish with the 1 TBSP oil and shingle the sweet potatoes in a single layer along the bottom of the dish.
- Pat the chicken dry with paper towels, toss with the lime juice, lime zest, and 1 tsp olive oil.
- In a small dish combine the salt, chili powder, smoked paprika, granulated garlic, cumin, dried cilantro, onion, black pepper, and cayenne pepper. Toss the chicken in the spices and coat well.
- Place the chicken skin side up on top of the sweet potatoes in the baking dish and bake, uncovered, for 45 minutes or until the chicken registers 170 degrees F in the thickest part of the thigh.
- Garnish with lime circles and fresh cilantro.
