Smoky Pumpkin Mac and Cheese
A little pumpkin puree and smoked paprika give this macaroni and cheese a delicious autumn flavor.

Ingredients
- 8 ounces elbow macaroni
- 2 TBSP unsalted butter
- 8 ounces (1 cup) pumpkin puree
- 1 cup whole milk
- 4 ounces cream cheese, cubed
- 2 tsp smoked paprika
- salt & pepper
- 8 ounces mild cheddar cheese, shredded
Directions
- Cook your pasta according to package directions. Drain and set aside.
- Add the butter, pumpkin puree, and milk to a large saucepan over medium-high heat. Stir and cook until it begins to slightly boil then reduce heat to medium-low.
- Add the cream cheese, smoked paprika, 1/2 tsp salt, and 1/4 tsp pepper. Stir and cook until cream cheese is melted. Stir in the cheddar cheese and cook until melted and sauce is smooth.
- Stir the cooked pasta into the sauce and season with salt and pepper to taste.
