Smoky Pumpkin Mac and Cheese

A little pumpkin puree and smoked paprika give this macaroni and cheese a delicious autumn flavor.

Smoky Pumpkin Mac and Cheese

Ingredients

8 ounces elbow macaroni
2 TBSP unsalted butter
8 ounces (1 cup) pumpkin puree
1 cup whole milk
4 ounces cream cheese, cubed
2 tsp smoked paprika
salt & pepper
8 ounces mild cheddar cheese, shredded


Directions

1. Cook your pasta according to package directions. Drain and set aside.

2. Add the butter, pumpkin puree, and milk to a large saucepan over medium-high heat. Stir and cook until it begins to slightly boil then reduce heat to medium-low.

3. Add the cream cheese, smoked paprika, 1/2 tsp salt, and 1/4 tsp pepper. Stir and cook until cream cheese is melted. Stir in the cheddar cheese and cook until melted and sauce is smooth.

4. Stir the cooked pasta into the sauce and season with salt and pepper to taste.
