Brown Rice with Roasted Red Peppers and Feta
A simple Mediterranean brown rice dish with onion, roasted red peppers and feta cheese served with lemon wedges.

Ingredients
- 1 TBSP olive oil
- 1 large yellow onion, diced
- salt & pepper
- 2 medium garlic cloves, minced
- 1 tsp dried oregano
- 1 cup vegetable broth
- 1 1/4 cups water
- 1 cup long-grain brown rice, rinsed
- 2 roasted red peppers, patted dry and chopped
- 1/2 cup crumbled feta cheese
- lemon wedges
Directions
- Heat the oil in a dutch oven over medium-high heat.
- Add the onion and 1/2 tsp salt, cook stirring occasionally, until onion is softened and lightly browned, about 7 minutes.
- Stir in the garlic and oregano, cook until fragrant, about 10 seconds.
- Add the vegetable broth and water. Scrape the bottom of the pan with a wooden spoon to release any stuck on bits and bring to a boil.
- Stir in the rice, cover the pot and reduce heat to low.
- Simmer on low for 45 minutes. DO NOT REMOVE THE LID!
- Take off the heat and let sit for 15 minutes. ONCE AGAIN DO NOT REMOVE THE LID!
- Now remove the lid and add the roasted red peppers and feta. Fluff with a fork to combine.
- Add salt & pepper to taste and serve with lemon wedges.
