Mix all the meatball ingredients together in a large mixing bowl until well combined. Cover the bowl and refrigerate the mixture for 1 hour to allow the flavors to meld.
Preheat oven to 425°F. Line a rimmed baking sheet with parchment paper.
Take the mixture out of the fridge and use your hands to form balls around 1-inch in diameter. Place the balls on the lined baking sheet.
Bake the meatballs in the preheated oven for 12 to 15 minutes or until cooked through.
TZATZIKI SAUCE:
Peel the cucumber then grate it and squeeze out any excess water. Mix the cucumber with the remaining tzatziki sauce ingredients in a bowl until well combined. Season with additional salt & pepper to taste.
