INGREDIENTS

  • MEATBALLS:
  • 1 pound ground beef
  • 8 ounces ground pork
  • 1 cup panko breadcrumbs
  • 1 large egg
  • 1 garlic clove, minced
  • 1/4 cup finely chopped red onion
  • 1 TBSP freshly chopped mint leaves
  • 1 tsp dried oregano
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • zest and juice of 1/2 lemon
  • TZATZIKI SAUCE:
  • 1 medium cucumber
  • 11-ounces plain Greek yogurt
  • 1 clove garlic, minced
  • 1 TBSP olive oil
  • 2 tsp lemon juice
  • 1/4 tsp dried dill
  • 1/4 tsp salt
  • 1/8 tsp pepper



DIRECTIONS

  1. MEATBALLS:
  2. Mix all the meatball ingredients together in a large mixing bowl until well combined. Cover the bowl and refrigerate the mixture for 1 hour to allow the flavors to meld.
  3. Preheat oven to 425°F. Line a rimmed baking sheet with parchment paper.
  4. Take the mixture out of the fridge and use your hands to form balls around 1-inch in diameter. Place the balls on the lined baking sheet.
  5. Bake the meatballs in the preheated oven for 12 to 15 minutes or until cooked through.
  6. TZATZIKI SAUCE:
  7. Peel the cucumber then grate it and squeeze out any excess water. Mix the cucumber with the remaining tzatziki sauce ingredients in a bowl until well combined. Season with additional salt & pepper to taste.
