INGREDIENTS
2 TBSP olive oil
1 TBSP paprika
2 tsp ground cumin
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1/2 tsp ground black pepper
1/4 tsp cayenne
1 whole chicken (5 to 6 lbs)
1 lime, quartered
CONVERSION CALCULATOR
DIRECTIONS
Preheat the oven to 450°F.
Place a baking rack onto a rimmed baking sheet.
In a small bowl mix together the oil and all the spices and set aside.
Place the lime wedges in the chicken cavity then pat the outside of the chicken dry with paper towels.
Rub the oil-spice mix all over the chicken including under the skin as much as you can.
Truss the chicken then lay then breast-side up on the baking rack.
Roast the chicken in the preheated oven for about 75 minutes or until the chicken has an internal temperature of 165°F.
Take the chicken out of the oven and place on a cutting board. Allow chicken to rest for 15 minutes before slicing.
