INGREDIENTS

  • 1 TBSP olive oil
  • 2 tsp smoked paprika
  • 2 tsp salt
  • 1 tsp freshly ground black pepper
  • 1 tsp onion powder
  • 1 tsp granulated garlic
  • 2 pound pork loin



DIRECTIONS

  1. In a small bowl mix together the oil, smoked paprika, salt, pepper, onion, and garlic until well combined.
  2. Rub the spice mixture evenly all over the pork loin then wrap the pork loin tightly in foil and refrigerate for about 24 hours.
  3. Take the pork loin out of the refrigerator and set aside.
  4. Preheat the oven to 300°F.
  5. Heat a large cast-iron skillet over medium-high heat.
  6. When the skillet is very hot lay the pork loin in the pan, fat-side up, and cook until well browned on the bottom, about 2 minutes.
  7. Turn the pork and brown the same way on all sides, 1 to 2 minutes per side.
  8. Return the pork loin fat-side up in the skillet then place in the preheated oven until cooked through (145°F), about 1 hour.
  9. Take the pork out of the oven and let sit to cool for about 20 minutes.
  10. Put the pork in an air tight container and refrigerate for at least 6 more hours.
  11. Take the pork out of the refrigerator then use a sharp knife to slice very thin.

Have made thin sliced lunch meat from all the animal proteins except pork. never thought of it until recently. as good fortune would have it, the cruise I was on two weeks ago served it! Fantastic. the shape clearly said pork loin. So here I am. I’m going to follow this recipe for technique, might change the seasoning but otherwise… as written. I have a nice slicer and am looking forward to the end result.
