Mix together the CHICKEN SAUSAGE ingredients (ground chicken, paprika, garlic, salt, black pepper, cayenne, oregano, and thyme) in a large bowl until well combined.
Heat the oil in a large saute pan over medium-high heat.
Add the chicken sausage to the pan and cook, while breaking up the sausage, until browned, about 5 minutes.
Add the onion, celery, bell pepper, tomatoes, and 1/4 tsp salt to the pan and cook, stirring often, for about 5 minutes.
Stir in the uncooked rice until well combined with the sausage and vegetables.
Stir in the water then bring to a boil.
When the water begins to boil place a lid on the pan and reduce the heat to low then simmer for 10 minutes without removing the lid.
Turn off the heat and let the pan sit on the stove, making sure to keep the lid on, for 20 more minutes, or until the rice is cooked.
Take the lid off the pan then stir and season with salt & pepper to taste.
