Cook the pasta according to package directions then drain, reserving 1/2 cup of the pasta water and set aside.
Heat the oil in a large skillet over medium heat.
Add the onion to the pan and cook, stirring often, until onion is softened and well browned, about 15 minutes.
Add the ground beef to the pan and cook, while breaking up the beef, until browned, about 8 minutes.
Stir in the garlic, paprika, 1 tsp salt, and the reserved pasta water until well combined then use a wooden spoon or spatula to scrape any bits stuck to the bottom of the pan.
Stir in the cooked macaroni and continue to cook, stirring often, for about 1 more minute.
