INGREDIENTS

  • 1 pound fresh zucchini
  • salt
  • 2 large eggs, beaten
  • 1/2 cup diced red onion
  • 3 medium garlic cloves, minced
  • 3 ounces feta cheese, crumbled
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp dried dill
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/4 tsp freshly ground black pepper
  • 1/4 cup olive oil plus extra
  • tzatziki, Greek yogurt, and/or lemon wedges for serving



DIRECTIONS

  1. Trim the ends off the zucchini and discard, then grate the zucchini on the large holes of a box grater.
  2. Put the grated zucchini into a colander and sprinkle with 1 tsp of salt then set aside for about 20 minute to allow the zucchini to release any excess moisture.
  3. After 20 minutes, press down the grated zucchini in the colander to get as much moisture out as possible
  4. Put the zucchini into a large mixing bowl along with the eggs, onion, garlic, feta, flour, baking powder, dill, oregano, thyme, and black pepper and mix until well combined.
  5. Heat the 1/4 cup of olive oil in a large saute pan over medium-high heat.
  6. When the oil is hot, carefully add a few 1/4-cup size scoops of the zucchini mixture into the pan then press down to form patties about 3-inches in diameter (dont overcrowd them) and cook until lightly browned on one side, about 3 minutes, then carefully flip and cook about 3 more minutes or until browned and crispy.
  7. Transfer the cooked patties to a plate and set aside then cook the remaining patties adding more oil to the pan, if needed.
  8. Serve with tzatziki, Greek yogurt, and/or lemon wedges.
