INGREDIENTS
2 TBSP smoked paprika
1 TBSP garlic powder
1 TBSP ground cumin
1 TBSP onion powder
2 tsp salt
1 tsp black pepper
1 tsp dried oregano
1/4 tsp cayenne
4 pound bone-in pork shoulder
2 TBSP olive oil
1/4 cup water
2 TBSP prepared yellow mustard
2 TBSP soy sauce

DIRECTIONS
Preheat the oven to 325°F.
In a small bowl mix together the smoked paprika, garlic, cumin, onion, salt, black pepper, oregano, and cayenne then set aside.
Pat the pork shoulder dry with paper towels then rub the seasoning mix evenly all over the pork.
Heat the oil in a large dutch oven over medium-high heat.
Sear the pork in the hot oil until well browned on all sides, about 2 minutes per side.
Transfer the seared pork shoulder to a plate and set aside.
Add the water, mustard, and soy sauce to the dutch oven then stir and use a wooden spoon or spatula to scrape any stuck on bits from the bottom.
Return the pork shoulder to the dutch oven then cover with a lid and place in the preheated oven.
Cook the pork for 3 hours and 30 minutes or until very tender.
Use two forks to shred the pork, discarding the bone.
Season the pork with salt & pepper to taste.
