Add the dates and water to a food processor and blend into a smooth paste.
Break the chocolate into small pieces then place into a glass bowl and melt the chocolate in a microwave in 20 second intervals, stirring after each interval, until completely melted.
Mix the melted chocolate and date paste in a large bowl until well combined.
Line a baking sheet with parchment paper then roll the chocolate mixture into a rectangle between 1/8-inch and 1/4-inch thick.
Refrigerate the chocolate until hardened, about 2 hours.
