Creamy Cheese and Broccoli Gemelli

Ingredients
- 8 oz gemelli pasta
- 1 1/2 cups frozen broccoli florets
- 2 1/2 TBSP unsalted butter
- 3 TBSP all purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 2 1/2 cups whole milk
- 4 oz cream cheese, softened
- 4 oz sharp cheddar cheese, shredded
Directions
- Cook pasta according to box directions adding the broccoli 2 minutes before pasta cook time ends, drain and set aside.
- In a medium saucepan melt the butter over medium heat and add the flour, salt, and pepper. Stir until combined, about 1 minute.
- Turn heat to medium-high and slowly whisk in the milk and keep whisking until mixture comes to a boil.
- Reduce heat to low and simmer stirring occasionally until mixture becomes thick like heavy cream.
- Take off the heat and stir in the cheeses until melted and fully incorporated.
- Add the pasta and broccoli, stir to combine, add salt and pepper to taste.

Loved this recipe. Only thing I would add is after adding the pasta and broccoli to the sauce put the pan back over low heat so the frozen broccoli heats thoroughly. I also added more broccoli than the recipe called for. Maybe my broccoli pieces were big, but 1 1/2 cups didn't go very far.
