Golubtsi (Russian Cabbage Rolls)

A beef, pork, and rice mix rolled up in cabbage leaves and baked in a sour cream tomato sauce.

Ingredients

  • CABBAGE ROLLS:
  • 1 cup uncooked long-grain white rice
  • 1 large head green cabbage
  • 1/2 pound ground beef
  • 1/2 pound ground pork
  • 1 medium carrot, grated
  • 1 medium yellow onion, finely chopped
  • 1 large egg, lightly beaten
  • 1 tsp salt
  • 1/2 tsp pepper
  • SAUCE:
  • 1 15-ounce can crushed tomatoes
  • 1/2 tsp crushed red pepper
  • 1/2 cup sour cream plus extra for serving
  • 1/2 cup water
  • 1/4 tsp salt



Directions

  1. Preheat the oven to 350°F.

  2. MAKE THE RICE: Add the rice and 1 1/2 cups of water to a small saucepan. Bring to a boil then cover the pan and reduce heat to low. Cook on low, DO NOT REMOVE THE LID, for 10 minutes. Take off the heat, WHILE KEEPING THE LID ON, and let sit, WITH THE LID ON, for 10 more minutes.

  3. While the rice cooks bring a large pot of water to a boil. Submerge the head of cabbage in the boiling water and cook for about 20 seconds. Transfer the cabbage to a large bowl of ice water. This process will help loosen the cabbage leaves so theyre easier to remove. Carefully remove the cabbage leaves doing your best to keep them intact. Set the removed cabbage leaves aside.

  4. In a large bowl mix together the rice, beef, pork, carrot, onion, egg, salt, and pepper. Separate the leaves in two by cutting out the thick veins. Add 2 to 3 heaping Tablespoons of meat mixture in the center of each cabbage leaf. Fold in the sides of each of the cabbage leaves then roll into fat little burrito shapes. Nestle the cabbage rolls seam-side down into a 9x13 baking dish.

  5. MAKE THE SAUCE: Add the crushed tomatoes, crushed red pepper, sour cream, water, and salt in a saucepan over medium heat. Stir to combine and cook until heated through, about 3 minutes.

  6. Pour the sauce into the baking dish over top of the cabbage rolls. Cover the baking dish tightly with foil and bake in the preheated oven for 1 hour.

  7. Take the foil off the baking dish and continue to bake for 20 more minutes.

  8. Take the cabbage rolls out of the oven and allow to cool for about 10 minutes. Serve the cabbage rolls with extra sour cream on the side.
