INGREDIENTS

  • 2 lb turkey meatballs* see recipe below
  • Quick tomato sauce* see recipe below
  • 4 oz mozzarella cheese, shredded
  • 1 oz Parmesan cheese, shredded
  • 12 oz ciabatta garlic toast* see recipe below
  • Quick tomato sauce:
  • 28 oz can crushed tomatoes
  • 1 cup water
  • 6 oz can tomato paste
  • 1/2 tsp basil
  • 1/2 tsp granulated onion
  • 1 tsp granulated garlic
  • 1/4 tsp oregano
  • 1 tsp kosher salt
  • 1/4 tsp pepper
  • 1 tsp parsley
  • 1 TBSP extra virgin olive oil
  • Turkey Meatballs:
  • 1 lb ground turkey
  • 2 eggs, beaten
  • 1 tsp kosher salt
  • 1/4 tsp pepper
  • 1/4 tsp granulated garlic
  • 1 tsp parsley
  • 1 cup cooked rice
  • Ciabatta Garlic Toast:
  • 4 TBSP unsalted butter, softened
  • 1/4 tsp granulated garlic
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp parsley
  • Half a french baguette or Italian bread sliced 1 inch thick (about 20 slices)

DIRECTIONS

  1. Quick Tomato Sauce: In a medium pot combine all the ingredients for the tomato sauce and simmer over low heat for 20 minutes or until needed for the final dish.
  2. Turkey Meatballs: Mix all the ingredients together, the mixture will feel loose. Form 15 balls and place on a parchment paper lined baking sheet. Cook at 425 degrees F for about 12 minutes or the meatballs are cooked through and register 165 degree F internal temperature.
  3. Ciabatta Garlic Toast: Mix the butter, garlic, salt, pepper, and parsley. Lightly spread butter on one side of each slice. Place on a wire rack over a sheet pan and bake until crispy and golden brown, about 12 minutes at 425 degrees F.
  4. In a 12 inch broiler proof pan ladle 1 cup of tomato sauce and place the meatballs into the sauce in an even layer. Cover with another cup of sauce.
  5. Heat the broiler. Top the meatballs with the cheese and cook for 5-8 minutes or until the cheese is browned and bubbly.
  6. Serve the meatballs with the garlic toast and any extra sauce.
