INGREDIENTS

  • 1 TBSP olive oil
  • 1 small red onion, diced
  • 2 medium ribs of celery, diced
  • 2 medium carrots, diced
  • 2 garlic cloves, minced
  • 1 pound mushrooms, sliced
  • salt & freshly ground black pepper
  • 8 cups water
  • 1 cup pearl barley



DIRECTIONS

  1. Heat the oil in a dutch oven or large pot over medium-high heat.
  2. Add the onion, celery, carrots, garlic, mushrooms, 2 tsp salt, and 1/4 tsp pepper to the pot and cook, stirring often, for about 5 minutes.
  3. Stir in the water and barley and bring to a boil.
  4. When the water begins to boil reduce heat to medium-low. Place a lid on the pot and simmer, stirring occasionally, until barley is tender, about 30 minutes.
  5. Season with additional salt & pepper to taste.
