INGREDIENTS
2 1/2 cups vegetable broth
1/2 pound middle eastern couscous
5 ounces fresh basil, stemmed
1/4 tsp kosher salt
pinch fresh ground black pepper
1 TBSP olive oil
CONVERSION CALCULATOR
DIRECTIONS
Bring the veggie broth to a boil and add the couscous. Reduce heat to simmer and cook 8 minutes. Drain reserving the liquid.
In a blender cup put the basil, salt, pepper and reserved cooking liquid. Blend until completely smooth.
Toss the couscous with the sauce. Drizzle with olive oil. Taste and adjust s & p to your liking.
