INGREDIENTS

  • 1/3 cup uncooked jasmine rice
  • 1/2 cup water
  • 4 medium zucchini, cut in half lengthwise and centers hollowed out
  • 1 pound ground beef
  • salt & pepper
  • 1/2 granulated garlic
  • 1/2 cup bell pepper, chopped
  • 1/2 cup yellow onion, chopped
  • 1 large egg
  • 1/4 cup Parmesan cheese, shredded



DIRECTIONS

  1. Stir the rice and water together in a small saucepan over medium-high heat. Bring to a boil then cover the pan and reduce the heat to low. Keep the lid on the pan and simmer over low heat for 10 minutes, DO NOT REMOVE THE LID. Turn off the heat, WITHOUT REMOVING THE LID, and let sit for 15 more minutes.
  2. Place the hollowed zucchini on a baking sheet and heat the oven to 425 degrees F. Season the zucchini with salt and pepper then bake the zucchini for 12 minutes in the oven.
  3. In a bowl stir together the remaining ingredients: ground beef, pepper, onion, egg, cooked rice, Parmesan, 1 tsp salt, and 1/4 tsp pepper.
  4. Pack the beef mixture into the zucchini halves. Bake until is beef is cooked through, about 30 minutes.
