INGREDIENTS

  • 2 TBSP olive oil
  • 1 pound uncooked orzo pasta
  • 2 medium garlic cloves, peeled and minced
  • salt & freshly ground pepper
  • 4 cups water
  • 1 broccoli crown, chopped small
  • 2 cups freshly grated Parmesan cheese



DIRECTIONS

  1. Heat the oil in a large saucepan over medium-high heat.
  2. Add the orzo, garlic, 1/2 tsp salt, and 1/2 tsp pepper to the pot and cook while stirring for about 1 minute.
  3. Stir in the water and bring to a boil. Reduce heat to medium-low and simmer uncovered, stirring often, about 7 to 8 minutes or until most of the liquid is absorbed.
  4. Stir in the chopped broccoli and cook, stirring often, for about 1 more minute.
  5. Take the pot off the heat then stir in the Parmesan cheese until melted.
  6. Add salt & pepper to taste.
