INGREDIENTS

  • THE RICE:
  • 1 cup uncooked long grain white rice
  • 1 1/2 cups water
  • THE STIR-FRY:
  • 6 medium garlic cloves, minced
  • 2 TBSP soy sauce
  • 1 cup water
  • 1 TBSP cornstarch
  • 1 TBSP rice vinegar
  • 1 tsp sesame oil
  • 1/2 tsp crushed red pepper flakes
  • 1 TBSP peanut oil
  • 1 pound broccoli florets



DIRECTIONS

  1. THE RICE:
  2. Stir the uncooked rice and water together in a large saucepan over medium-high heat and bring to a boil.
  3. When the water begins to boil cover then pan and reduce the heat to low then simmer over low heat, without removing the lid, for 10 minutes.
  4. After 10 minutes turn off the heat and allow the rice to sit, without removing the lid, for 15 more minutes.
  5. THE STIR-FRY:
  6. Mix together the garlic, soy sauce, water, cornstarch, vinegar, sesame oil, and crushed red pepper in a bowl until well combined then set aside.
  7. Heat the peanut oil in a large wok over medium-high heat.
  8. Add the broccoli to the wok and cook, while stirring, for about 2 minutes.
  9. Stir the sauce then pour it into the wok with the broccoli.
  10. Cook, while stirring, until the sauce begins to boil then reduce the heat to medium.
  11. Cook, while stirring, until sauce thickens and broccoli is desired tenderness, 2 to 5 more minutes.
  12. Fluff the rice with a fork then serve with the broccoli and sauce.
