INGREDIENTS

  • The Dough:
  • 1 packet active dry yeast(1/4 oz or 2 1/4 tsp)
  • 1 cup warm water
  • 1 TBSP honey
  • 3 cups all-purpose flour
  • 1 TBSP cooking oil plus a little extra
  • 1 tsp salt
  • The Toppings:
  • 1/4 cup plus 3 TBSP olive oil
  • boneless skinless chicken breast (about 10 to 12 ounces)
  • salt & pepper
  • 2 large garlic cloves, peeled and crushed
  • 1 large avocado, peeled, pitted and thinly sliced
  • 1/2 cup red onion, diced small
  • 8 ounces Monterey Jack cheese, shredded
  • 1/4 cup fresh chopped cilantro



DIRECTIONS

  1. MAKE THE DOUGH:
  2. In a stand mixer or large bowl mix the yeast, honey and water. Let stand 10 minutes or until it begins foaming.
  3. Add the 1 TBSP oil, salt and flour and mix until well combined and dough pulls away from sides of bowl.
  4. Pour a little oil into a separate large bowl.
  5. Knead the dough 10 minutes by hand or about 5 minutes using a stand mixer with a dough hook.
  6. Form the dough in a ball and place in the bowl with oil and flip around to cover in oil. Loosely cover with plastic wrap and put in a warm place to rise for 30 minutes.
  7. PREPARE THE TOPPINGS:
  8. Add the 1/4 cup of olive and garlic cloves to a small sauce pan over medium-low heat. Cook, occasionally turning garlic, about 5 to 6 minutes or until garlic is lightly browned. Remove from heat and let rest to cool.
  9. Heat the 3 TBSP of olive oil in a medium size pan over medium heat until shimmering.
  10. Generously season both sides of the chicken breast with salt and pepper. Lay chicken in the hot oil and cook without moving for 6 minutes, flip over and cook an additional 6 minutes or until the internal temp is 165°F. Remove chicken breast to a cutting board and let rest until cool.
  11. ASSEMBLE THE PIZZA:
  12. Preheat oven to 450°F. Lightly oil a baking sheet or 16-inch pizza pan.
  13. Stretch or roll out your dough and place on the oiled pan.
  14. Discard the garlic cloves from the garlic oil and brush the oil on top of the dough (you probably wont need all of it), then sprinkle on a little salt and pepper.
  15. Sprinkle on the Monterey Jack cheese. Thinly slice the cooked chicken breast and spread the slices out over top of the cheese. Place avocado slices in spots without chicken and then sprinkle on the diced red onion.
  16. Bake in the preheated oven for 15 to 17 minutes or until crust is golden brown.
  17. Remove pizza from the oven, sprinkle on the chopped cilantro. Cut into slices and serve.
