An easy to make Filipino dish consisting of chicken, cabbage, carrots, onion, and garlic tossed with vermicelli rice noodles and served with fresh lime wedges.

INGREDIENTS
8 ounces vermicelli rice noodles
2 TBSP peanut oil
1 pound boneless skinless chicken thighs, cut into bite-size pieces
1 medium yellow onion, thinly sliced
3 medium garlic cloves, roughly chopped
3 TBSP soy sauce
10 ounces shredded green cabbage
2 medium carrots, peeled and grated
salt & freshly ground black pepper
1 lime, cut into wedges

DIRECTIONS
Soak or cook noodles according to package directions then set aside.
Heat the oil in a wok or large saute pan over medium-high heat.
Add the chicken, onion, and garlic to the pan and cook, stirring often, until chicken is no longer pink, about 6 minutes.
Add the soy sauce, cabbage, and carrot to the pan and cook, stirring often, for about 4 minutes.
Add the noodles to the pan and toss to combine then season with salt & pepper to taste.
Serve with lime wedges on the side.
