INGREDIENTS

  • 8 ounces vermicelli rice noodles
  • 2 TBSP peanut oil
  • 1 pound boneless skinless chicken thighs, cut into bite-size pieces
  • 1 medium yellow onion, thinly sliced
  • 3 medium garlic cloves, roughly chopped
  • 3 TBSP soy sauce
  • 10 ounces shredded green cabbage
  • 2 medium carrots, peeled and grated
  • salt & freshly ground black pepper
  • 1 lime, cut into wedges



DIRECTIONS

  1. Soak or cook noodles according to package directions then set aside.
  2. Heat the oil in a wok or large saute pan over medium-high heat.
  3. Add the chicken, onion, and garlic to the pan and cook, stirring often, until chicken is no longer pink, about 6 minutes.
  4. Add the soy sauce, cabbage, and carrot to the pan and cook, stirring often, for about 4 minutes.
  5. Add the noodles to the pan and toss to combine then season with salt & pepper to taste.
  6. Serve with lime wedges on the side.
